Ingredients
- 1 pound bacon slices
- 1 large onion, chopped
- 8 ounces gruyere cheese, grated
- 1/2 cup minced fresh parsley
- 2 tablespoons chopped fresh basil or 2 teaspoons dried, crumbled
- 6 large beefsteak tomatoes cut into 1/2-inch-thick slices
- Salt and freshly ground pepper

Preparation
Step 1
Fry bacon in heavy large skillet over medium heat until crisp. Drain bacon on paper towels. Pour off all but 1/4 cup bacon drippings. Add onion to drippings in skillet and sauté until very soft, about 12 minutes. Transfer to medium bowl. Crumble in bacon. Mix in cheese, parsley and basil. (can be prepared 1 day ahead. Refrigerate.) Preheat broiler. Arrange tomatoes on broiler proof platter. Overlapping slightly. Season with salt and pepper. Top each slice with bacon mixture. Broil until cheese just melts. Serve warm or at room temperature.
