Ingredients
- Opt:
- 2 cups water
- 1 cup plain yogurt, warmed
- 1 pkg yeast
- 1 tbs salt
- 5 - 6 cups white bread flour
- 1 cup whole wheat flour
- 1/2 cup rye flour
- 1/2 cup precooked wheat berries
- 1 1/2 tsp dill seed
- 1 1/2 tsp caraway seed

Preparation
Step 1
Dissolve yeast in warm water, add warm yogurt
Stir in remaining ingredients, adding enough white flour to make a soft dough
Knead, let rise, covered in a warm place til doubled in bulk
Punch down, make a round loaf
Spray entire surface of cloche bottom w cooking spray, sprinkle w cornmeal
Put bread dough in bottom,let rise til double in bulk
Cut top of loaf in crossed design cover w cloche cover & bake undisturbed for 45 mins @425 degrees in a preheated oven.
Remove from oven, admire, & cool on a wire rack. Do nit put hot cloche on a cold surface
Baking this & other breads in the cloche, in a hot oven makes a wonderful loaf
Helpful hints:
Any bread recipe is suitable
Baking in a cloche creates a miniature steam oven, & results in very nice crust
Lightly grease the inside walls & bottom of the cloche bottom piece.
Sprinkle w cornmeal
You may find that you need to bake a bit longer & a bit hotter-experiment
Do not use soap to clean cloche-just brush & rinse
Eventually some discoloration may occur...consider it the cloche's badge of honor
Use the cloche for bread baking baking only
Do not set hot cloche on a cold surface
