Preparation
Step 1
1. Preheat oven to 375 degrees. Place dough in a lightly oiled bowl; cover with a towel and allow to rest in a warm place for 1 hour.
2. Meanwhile, pierce tomatoes with the tip of a paring knife. Toss together tomatoes, 3 tbsp. oil, salt, garlic and basil on a rimmed baking sheet. Roast in oven until tomatoes begin to blister, 25 to 30 minutes. Let cool.
3. Increase oven temperature to 425 degrees. On a lightly floured surface, roll out the dough to 1/4-inch thickness. Using a cookie cutter or the tip of a sharp knife, cut out 6 (5-inch) hearts, and place on a rimmed baking sheet. Bake until lightly puffed and browned, about 14 minutes, flipping them after 7 minutes. Remove from oven and cool slightly.
4. Slice the hearts in half horizontally, like making a sandwich. Divide the tomato mixture and mozzarella among the bottom halves, and top with Parmigiano-Reggiano. Replace the tops, brush with 2 tablespoons oil, and sprinkle with oregano. Place on a baking sheet, and bake until cheese is melted and tops are golden, about 5 minutes. Drizzle with olive oil; serve warm.
