Ingredients
- 1 large or 2 small heads of butter (Boston or Bibb) lettuce
- 3 oz parmesan cheese
- 2 T balsamic vinegar
- Pinch salt
- 1/3 cup good quality italian olive oil

Preparation
Step 1
Separate the leaves of lettuce, discarding any tough or discolored outer ones. Wash and dry thoroughly. Tear large leaves in half, and place in a salad bowl. Slice parmesan into very thin shavings, using a vegetable peeler or specialty slicer and scatter over lettuce. Sprinkle with balsamic vinegar and salt, and toss well. Drizzle with oil and toss again. Serve immediately.
