Pork Chops with Tangy Red Currant Sauce

Ingredients
- 1/2 C diced white onion
- 3 T minced garlic
- 1/2 C red wine Or Chicken stock
- 2 T sugar
- 2 T red currant jelly
- 1/4 C red wine vinegar
- 1 1/2 T grated lemon rind
- 4 bone-in center cut pork chops
- Salt & pepper

Preparation
Step 1
Heat saucepan over med heat. Add 1 T olive oil & saute onion & 1 T garlic, 4 min. until onion is tender. Add wine; cook 5 min. Add sugar & currant jelly; bring to a boil. Cook 1 min until reduced to 1/2 C.
Heat grill. Combine 2 T garlic & lemon rind. Sprinkle evenly over pork; sprinkle with salt & pepper. Cook chops 3 min. per side. Remove from grill & let stand 5 min. Serve with red currant sauce.
Serve with mashed potatoes & lemon mint peas.
