Ingredients
- 2 garlic cloves, minced
- 1/2 onion chopped
- vegan sausage, cubed
- 2 tsp tamari
- pepper
- parsley
- 1 tbsp. olive oil
- 1 large sweet potato, cubed
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/2 tsp basil
- salt and pepper

Step 1
preheat oven to 350. on a baking sheet combine olive oil, potato, thyme, oregano, basil, salt and pepper. bake in oven until potatoes are easy to pierce with a fork, about 20 minutes.
meanwhile, in a saute pan over medium high heat, cook garlic and onion until softened, then add sausage, tamari and pepper. cook until sausage is browned.
add cooked potatoes to the sausage mixture and stir until combined. sprinkle with parsley and serve.
