Ingredients

  • 2 tablespoons oil
  • 1 onion, minced
  • 1 large green bell pepper, seeded and minced
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 cup milk
  • 1 egg
  • 2 egg whites
  • 6 tablespoons cheddar cheese
  • 1 cup whole wheat flour
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon thyme
  • 1/8 teaspoon cayenne

Preparation

Step 1

1. Saute onion and pepper in 1 tbsp oil until softened, about 10 minutes. Cool.

2. Mix 1 tbsp oil and honey-eggs, and 1/4 cup cheese. Stir in onions.

3. Mix together flours-cayenne. Add egg mixture, stir just to combine. Spoon into 12 greased muffin cups. Sprinkle with rest of cheese.

4. Bake at 375 until golden and tester tests clean.
