Ingredients

  • 1 1/2 c all-purpose flour
  • scant 1/4 t salt
  • 5 T unsalted butter
  • 4 T vegetable shortening
  • 4-5 T ice water
  • 6 c blackberries
  • 3/4 c sugar
  • 4 T butter
  • Heavy cream, whipped cream or ice cream
  • *Note: chill the butter and shortening thoroughly in the freezer.

Preparation

Step 1

Preheat oven to 425. Have ready a 9" round ovenproof dish 2 or more inches deep. Prepare the pastry dough first; then refrigerate it while you get everything else ready.
Dough:
Place the flour and salt in a food processor. Add the butter and shortening and process until completely incorporated. Add the ice water and process until the dough just begins to cling together, about 10 seconds. Gather the dough in a ball, wrap and refrigerate until ready to use. Roll out the dough in a large, ragged circle, big enough to line the pan and flop a bit over the top. Add the berries, sprinkle them with sugar and dot with butter. Bring the edges of the pastry over the berries; there probably will be a little space in the center. Bake for 45 minutes. Put a sheet of foil on the bottom of the oven because cobblers bubble over. Let cool and serve with the heavy cream, whipped cream or ice cream.
