White Bean Salad

Ingredients
- 2 cans white beans
- 1 t salt
- 2 garlic cloves, minced
- 1 T Dijon mustard
- 2 T white wine vinegar
- 1/3 c olive oil
- 6 plum tomatoes, chopped
- 1 small red onion, diced
- 1 bunch sage

Preparation
Step 1
Drain & rinse beans. In a small bowl, crush garlic and salt into paste. Add mustard and vinegar and mix. Whisk in olive oil. Pour over beans. Add tomatoes and onion and toss. Set aside. Cover large skillet with oil. Add sage, sprinkle with salt and fry until crisp, approx 2 min. Sprinkle with sage just before serving.
