Ingredients
- 4 onions
- 1/2 c olive oil
- salt and pepper
- 3 oz parmesano reggiano cheese
- arugula
- juice of 1 lemon

Preparation
Step 1
Don’t peel onions - trim off root and top before cutting each across into 4 circular slices about 3/4" thick. Keeping the slices whole, transfer to broiler pan. Brush and oil, salt and pepper. Put 4" from heat and broil 7-8 minutes until browned. Shave cheese. Repeat all the above and onions carefully on the other side. Discard outer layers when cool. Separate into rings. Put about a quarter in a layer on a serving dish and build up salad – onion rings, torn arugula, cheese, salt, pepper, lemon juice, oil. Don't toss. Serve.
