LEMON SUGAR COOKIES

• Lemon Sugar Recipe:
• 1 cup butter, softened
• 1 1/2 cups sugar
• 1 egg
• 2 1/4 cups flour
• 1/2 tsp baking powder
• 1/2 tsp Kosher salt
• 1 tsp vanilla
• Zest of 2 large lemons
• Juice of 1 large lemon, about 1 tbsp
• 1/2 cup sugar
• Zest of 1 large lemon

Step 1

Preheat oven to 350F. Line cookie sheets with parchment paper. Cream together butter and sugar until light and fluffy, about 3 minutes. Add egg and mix until well combined.

Stir in flour, baking powder, alt, vanilla, lemon zest and lemon juice. Allow to sit for about 3 minutes to have lemon flavour develop.

Scoop cookie dough by the tbsp full and roll into a ball.

For Lemon Sugar, stir together sugar and lemon zest.

Add lemon sugar to a large bowl for rolling cooking dough in before baking. Place each call of cookie dough into the bowl of lemon sugar and roll to coat well. Place cookie dough onto baking sheet, spacing about 1 1/2" to 2" apart. Lightly press each cookie down. Balke for 10 to 12 minutes or until lightly browned.
