Ingredients

  • 12 oz. uncooked Italian sausage, out of casings
  • 1 c onion, chopped
  • lots of garlic
  • 1 T extra virgin olive oil
  • 2 c chicken stock
  • 1 medium head cauliflower, broken into florets
  • 1/4 t crushed red pepper
  • 1 lb pasta
  • 1/2 cup plain fine dry breadcrumbs
  • 1/2 cup graded pecorino romano cheese
  • 1/2 cup snipped Italian flat leaf parsley

Preparation

Step 1

Cook sausage and onion in olive oil, until sausage is browned and onions are tender. Add cauliflower to get a bit brown and crushed red pepper and then stock. Bring to boil. Reduce to simmer and cook about 10 min. Cook pasta. Drain and return to saucepan. Toss with bread crumbs, cheese, and parsley. Greens can be added.
