Ingredients

  • 4 large Navel Oranges
  • 2 Pink grapefruits
  • 1 ripe Pineapple
  • 4 medium sized just ripe bananas
  • 2 Tbsp lemon juice
  • 1/2 tsp. dried thyme
  • 1/4 c. light clover honey
  • 1/4 c. Drank brown sugar - packed
  • sprigs of fresh mint (optional)

Preparation

Step 1

Bake at 350 for 30 mins.

Cut fruit to remove pith. Save juice. Set aside

Peel pineapple, removing all dark eyes. Cut crosswise into 1/2" thick slices. Core centers. Cut 8 slices into quarters. Save remaining for other use.

Peel bananas, halve crosswise then cut lengthwise. Place in bowl and sprinkle with lemon juice to prevent browning.
Arrange fruit in 9x12 baking dish/pan. Arrange fruit in attractive rows. Can be made ahead to this point - refrigerate and warm when ready.

Sprinkle fruit with thyme. Drizzle honey over top, then sprinkle evenly with brown sugar.

Bake on center rack of oven for 30 mins, basting twice with pan juices.

Before serving, can be slightly broiled for 1-2 mins to brown slightly.

Garnish with mint flakes before serving.
