Almond Croissant French Toast

Ingredients
- 7 large eggs
- 2 1/2 cups milk
- 2 1/2 T sugar
- 1 t vanilla extract
- 6 T butter
- 1/2 cups sliced almonds
- 1/2 t grated lemon zest
- 1 t almond extract
- 8 medium croissants
- maple syrup

Preparation
Step 1
Preheat oven to 325
Spray a 9 x 13 pan with cooking spray
In a large bowl, combine beaten eggs, milk, sugar, and vanilla. Set aside.
In a small saucepan, melt butter and add almond slices, lemon zest and almond extract.
Cut croissants in half horizontally.
Place 8 halves, cut side up in dish.
Drizzle 1 heaping teaspoon of almond mixture onto croissants.
Place remaining 8 croissants, cut side down, overlapping but not perfectly lined up, in dish.
Pour egg mixture evenly on top.
Drizzle remaining almond mixture on top.
Bake uncovered approx 35 minutes until puffed and set.
Cool slightly before serving with maple syrup and powdered sugar
