Ingredients

  • Batter:
  • 1/2 tsp nutmeg
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/4 tsp salt
  • 1 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 cup butter
  • 1 egg
  • 1/2 cup white sugar
  • 1/3 cup milk

Preparation

Step 1

Put brown sugar, melted butter and nutmeg in 8" square cake pan. Dissolve sugar in butter and place peach slices (or any other fruit) in rows on butter/sugar mixture. Mix batter ingredients and spoon onto fruit. Spread evenly over peaches. Bake at 350F for 30 minutes. Turn out onto plate while still hot and serve as is or with whipped cream or ice cream. May be served warm or cold.

Batter: Mix dry ingredients. Cream butter and sugar. Beat in egg. Add half dry ingredients, mix and add milk. Then add rest of dry ingredients.

Variation: Cara Cara oranges, peeled and sliced approximately 1/4" thick. Dried on paper towel. Add orange zest to batter.
