  • cups cubed deli rotisserie chicken (from 2- to 3-lb chicken) SAVE $

  • cup Greek olives, pitted

  • cup capers, rinsed

  • Salt and pepper to taste

  • Mixed salad greens, if desired

Directions

1 In food processor, place mayonnaise, 1/2 cup of the yogurt and the basil. Cover; process until pureed. Add lemon juice. Cover; process just until blended. Transfer mixture to large bowl. 2 Add remaining 1 cup yogurt; mix well. Fold in chicken, potatoes, bell peppers, olives, capers and onion; season with salt and pepper. 3 Cover; refrigerate 3 hours. Serve salad on mixed greens.
