Banana Cake

Ingredients

  • 1 stick plus 2 1/2 tbsp. margarine
  • 2 cups flour
  • 1 cup mashed banana
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 1/2 cups sugar
  • 2 eggs, separated
  • 1 tsp. baking powder
  • 1/2 cup hot water

Preparation

Step 1

1. Preheat oven to 350 degrees. Cream margarine and sugar. Add bananas,egg yolks and vanilla and beat well.
2. Sift flour and baking powder together. Dissolve baking soda in hot water. Add wet and dry ingredients to batter alternately. In a separate bowl, beat egg whites until stiff. Fold into batter.
3. Pour into a greased 9 by 13 inch pan. Bake 40 minutes.
