  • 1 tray of oxtails
  • 1 can beef broth
  • 1 can chicken broth
  • Water
  • 2-3 star anise
  • 3 inch piece of ginger (1 inch grated for topping, 2 inches smashed)
  • 1/2 onion thinly sliced
  • 1 cup) Bok choy chopped into thin strips
  • Cilantro
  • 1 bundle of Long rice soaked in hot water cut in half
  • 1 bay leaf

Preparation

Step 1

Brown oxtails in pot then boil for 10 minutes in water.

Drain, wash oxtails, then trim off excess fat
.
Bring about 3 cups of water to a boil then add both broths, the smashed ginger, bay leaf, star anise, and oxtails.

After about 20 minutes add in onions then turn heat to low and simmer for 2 hours.
Add in long rice and bok choy then turn off heat.

Right before serving top with grated ginger and cilantro.

Eat over rice.
