Ingredients
- 1 Tbl coriander seeds
- 1 Tbl fennel seeds
- 1 Tbl caraway seeds
- 1 tsp black peppercorns
- 4 oz softened unsalted butter
- 2 tsp kosher salt

Step 1
Toast spices in small skillet over medium heat, shaking pan, until fragrant, 2-3 minutes.
Mash remaining ingredients together, then roll in parchment. Freeze until firm.
Uses:
Grate over hot rice, pumpernickel toast.
