Ingredients

  • 4 large onions, some red, some yellow
  • 3 T. butter
  • 1 T. vegetable oil
  • 2 t. light brown sugar
  • 4 c. beef broth (can be pre-made or use Better Than Bouillon Beef base- 4t. to make 4 cups)
  • 1 c. red wine--either cooking wine or Pinot Noir
  • 1 bay leaf
  • 1 t. thyme
  • 1/4 t. garlic powder
  • 1 t. salt
  • 1 t. pepper

Preparation

Step 1

Slice onion fairly thin
Set pot on Saute
Melt butter in pot--til it starts to sizzle
Add onions and brown sugar
Saute for 10", stirring constantly, onions should become translucent
Add beef broth, wine, thyme, garlic powder, salt and pepper.
Put bay leaf on top
Turn off saute
Put on lid and lock, make sure pressure vent is on seal
Push pressure cook button
Set time for 10 minutes.
In the meantime, preheat oven to broil
After the 10 minutes is up, release pressure being careful not to burn your hand. It will take a while for all steam to be released.
Ladle soup into individual soup crocs or ramikins.
Place crocs on aluminum-lined cookie sheet
Put some croutons on top
Place slices of Swiss or Gruyere cheese on top. Slices should be hanging over croc.
Garnish with paprika
Broil until cheese melts completely.
You may freeze left over soup--perhaps in smaller containers.
