Curried Ground Beef & Rice 1 Picture

Ingredients

  • 1 lb lean ground beef
  • 1 1/2 large onions, chopped
  • 3 garlic cloves, minced
  • 3 tbsp finely chopped ginger
  • 2 tbsp chopped fresh coriander (optional)
  • 3 tbsp curry powder
  • 1 cup frozen peas
  • 2 medium tomatoes, chopped
  • 1/4 cup oil
  • 2 cups basmati rice
  • 3 1/2 cups hot water
  • 2 tsp salt, or to taste

Preparation

Step 1

Wash and drain rice and set aside.

Heat oil in a large pot, add the onion and fry until soft (do not brown).

Add ginger and garlic and fry for half a minute or so.
Add the curry powder, one teaspoon salt and fry for 2 or 3 additional minutes. Sprinkle a little water if the mixture becomes too dry. Add coriander to the mixture.

Add the meat and fry until it losses its pinkness.

Add the peas and mix well with the meat mixture.

Add the rice to the mixture and stir for two minutes.

Add the water, continuing to stir to make sure that nothing sticks to the bottom of the pot.

Add the ret of the salt and tomatoes.

Cover the pot and bring it to a boil, stirring occasionally. When it comes to a full boil, reduce heat to very low and cook covered for 15 to 18 minutes, or until the rice is cooked and the liquid is absorbed.
