Ingredients

  • 1 tbsp evoo
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 28oz can crushed tomatoes
  • 1 tsp thyme
  • large pinch red pepper flakes
  • salt and pepper
  • 1 c small pasta
  • 1 15oz can cannellini beans, drained and rinsed.
  • nutritional yeast

Preparation

Step 1

In a large pot or ductch oven, heat the oil over medium heat. add onions and garlic and cook stirring occasionally until soft, about 6 minutes.
Stir in tomatoes, thyme and red pepper flakes. season with salt and pepper and simmer, stirring occasionally, until slightly thickened, about 5 minutes.
Pour in 3 cups of water into the tomato mixture. bring to a boil over high heat and stir in the pasta. reduce heat and simmer, stirring often until pasta is al dente, about 9 minutes.
stir in the beans and simmer until heated through, about 2 minutes.
top with nutritional yeast.
