Ingredients
- 1 large Red Cabbage - sliced
- 3 thick bacon slices - diced
- 1 large onion - chopped
- 3 garlic cloves - crushed
- 1 to 1 1/2 tbsp Caraway Seeds
- 1/2 cup water
- 2 firm ripe pears - cored & chopped (optional)
- Juice from 1 lemon
- 2 cups Red Wine
- 3 Tbsp Red Wine Vinegar
- 3/4 cup honey
- Salt & Pepper

Step 1
Fry diced bacon to crisp but not burnt. Drain on paper towel, retaining bacon grease in pan. Fry onion until pale golden. Stir in cabbage, garlic, caraway seeds and water. Cook for 8-10 mins. Add lemon juice, chopped pears, red wine and vinegar. Cover and cook for 10-15 minutes. Stir in honey.
If there is too much cooking liquid, remove lid and let cook to reduce liquid. Adjust seasoning to taste.
