Roasted Rosemary Pork with Asparagus 0 Picture

Ingredients

  • 3 large garlic cloves minced
  • 4 t chopped fresh rosemary
  • 1/2 t salt
  • 3 T EVOO
  • 2 T Dijon Mustard
  • 2 T fresh lemon juice
  • 1 Center cut pork loin (5 pounds)
  • 2 pounds fresh asparagus

Step 1

Preheat oven to 400
Mix garlic, rosemary, salt, pepper, olive oil, mustard, and lemon juice in a small bowl. Reserve 1 T of the mixture.

Spread remaining over fat side of roast. Place pork fat side up on a wire rack in a roasting pan and place in the oven. Reduce heat to 325 and cook uncovered until done 145 degrees internal temperature.

Toss asparagus with reserved mixture and place around the roast during the last 15 minutes of cooking.
