QUESADILLA - Chicken & Jalapeno Quesadilla with Lime Yogurt Sauce

Ingredients
- 2 small whole wheat tortillas
- 1 teaspoon EVOO
- 1 jalapeno, seeded or not, cut into rings
- 1 1/2 ounces shredded chicken
- 1 green onion, thinly sliced
- 2 tablespoons fresh cilantro, if on hand
- 60 grams Kraft Tex Mex Light Blend
- 1/4 cup Greek yogurt
- zest and juice of 1 lime
- generous pinch Maldon salt

Preparation
Step 1
Saute sliced jalapeno in the olive oil until tender and golden.
Add the lime zest and juice to the yogurt with the salt and mix well to blend. Set aside.
Place one of the tortillas on a work surface and cover with the cheese. Add the chicken, cooked jalapeno, green onion and cilantro.
Top with the other tortilla and cook in the same skillet for 3 - 4 minutes per side until golden and the cheese is starting to ooze out.
Remove to a board, cut into eighths and serve with the yogurt sauce.
