Maple-Whipped Sweet Potatoes

Ingredients
- 4 lbs. sweet potatoes (about 7)
- 4 tbsp. unsalted butter, melted
- 1/4 cup pure maple syrup
- salt
- pepper

Step 1
1. Pierce potatoes all over with a fork and place on a baking sheet. Bake in the oven at 400 degrees for about an hour or until very tender.
2. When cool enough to handle, halve sweet potatoes and scoop out flesh into a bowl.
3. Transfer to a food processor, add melted butter and maple syrup. Process until smooth.
4. Season with salt and pepper and serve warm.
