Ingredients
- 8 oz fresh pasta
- 1 TBSP extra virgin olive oil
- 16 oz combination of cod, shrimp and scallops cut into bite size pieces
- 1/2 med onion chopped
- 1/2 bell pepper chopped
- 1-2 cloves minced garlic
- 1 can rotel tomatoes
- 1/2 tsp oregano
- dash of salt and pepper

Preparation
Step 1
Cook pasta according to directions and set aside.
Heat olive oi and add onion, pepper and garlic. Saute over med heat until vegetables are tender.
Add tomatoes, oregano , salt and pepper. Bring to a boil and then cover and simmer 10 minutes.
Add seafood, cover and continue heating 3-5 minutes until seafood is done.
Reheat pasta with boiling or hot water.
Pour sauce over top.
