  • 1 c butter softened
  • 2/3 c powdered sugar
  • 1/2 c crushed peppermint candies (20)
  • 1 t vanilla
  • 1/2 t salt
  • 2 c flour
  • 1 c powdered sugar

Step 1

Preheat oven to 350 degrees. Line cookie sheets with parchment paper and set aside. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the 2/3c powdered sugar, 1/2c peppermint candies, vanilla and salt. Beat until combined scraping the sides of bowl. Beat in as much flour as you can with mixer. Stir in remaining flour.
Shape dough into 1" balls and place 2" apart on cookie sheets. Bake for 9-11 minutes or until cookies are set and bottoms are light golden. Cool on cookie sheets for 1 minute then transfer to wire racks for 5 minutes. Roll the warm cookies in the powdered sugar and cool completely. Then roll again in powdered sugar. If desired dust with finely chopped peppermint candies.
