Ingredients

  • 2 acorn squash, halved crosswise, seeded
  • 1 pouch (8.5 oz.) Uncle Ben's Ready Whole-Grain Medley, roasted garlic flavor
  • 2 Tbsp. butter
  • 1 onion, chopped
  • 1/3 cups sweetened dried cranberries
  • 1/4 cup peacan pieces
  • 1/4 cup orange juice
  • 1/2 tea. grated orange zest
  • 1/2 tea. salt

Step 1

Coat a 9x13 microwave-safe baking dish with cooking spray. Place squash halves in baking dish, cut side down; add 1/2 cup water to dish. Cover loosely with wax paper. Microwave on high until tender, 10-12 minutes.

Position broiler rack so that top of squash on pan will be 8" from heat source. Preheat broiler. Microwave rice according to package directions; reserve. In nonstick skillet, melt 2 Tbsp. butter over medium heat. Add onions; cook, stirring, 10-15 minutes. Add rice, cranberries, pecans, juice and zest. Cook until heated through, 1-2 minutes.

Place squash halves on jellyroll pan, cut side up; sprinkle cavities with salt. Evenly divide rice mixture among squash halves. Cut remaining butter into smll pieces; dot tops with butter.

Broil until browned, about 1 minute.
