  • 2 pkgs. (10 oz. each) frozen chopped broccoli
  • 1 c. bisquick baking mix
  • 1 c. milk
  • 2 eggs
  • 1/2 tsp. salt
  • 1 c. shredded cheddar cheese

Preparation

Step 1

Heat oven to 325. Butter 5 1/2 c. souffle dish or 1 1/2 qt. casserole. Cook broccoli as directed & drain. Beat baking mix, milk, eggs, and salt w/ hand mixer till smooth. Stir in broccoli & cheese. Pour into souffle dish. Bake till knife inserted half way between center and edge comes out clean (about 1 hr.) Serve immediately.

Change it up:
substitute corn or spinach for broccoli
