Ingredients

  • For the marinade:
  • l lb lean beef, cut into strips
  • 1 tsp oil
  • 9 oz medium egg noodles
  • 1 red pepper, deseeded and cut into strips
  • 6 baby corn, chopped
  • 3 oz mangetout
  • 3 spring onions, sliced diagonally
  • 2 cloves garlic, peeled and chopped
  • 2 tsp grated fresh ginger
  • 4 tbsp fresh orange juice
  • 6 tbsp hoisin sauce
  • 2 tbsp reduced soy sauce
  • 1 tsp runny honey
  • 1 tsp sesame oil

Preparation

Step 1

put marinade ingredients together into a shallow dish and mix together. add the beef strips and coat in the marinade. cover and set aside for 1 hour.

heat the oil in a wok or frying pan. then place the marinaded beef strips in the wok or frying pan. then place the marinated beef strips in the wok and fry on a high heat for 2mins until browned all over. remove the beef and set aside.

put the noodles in the pan of boiling water and cook according to the packet instructions.

add a drop of oil to the wok and return it to the heat. add the red pepper, baby corn, mangetout and green onion. stir fry for 2mins. add the garlic, ginger, beef and the leftover marinade and stir fry for a min. pour in the orange juice and cook for another min.

drain the noodles and place in 4 serving bowls. spoon over all the veges and beef and serve.
