Ingredients

  • 1 onion, chopped
  • 2 garlic gloves, chopped
  • 3 1/3 cup of canned diced tomatoes
  • 2 cups of elbow macaroni
  • 2 cup of frozen mixed vegetables
  • 8 cups of chicken stock
  • 2 cups of water
  • 4 cups of cubed cooked chicken
  • 1 celery, chopped
  • 2 tablespoons of olive oil
  • Salt and pepper to season

Preparation

Step 1

In a large stockpot, add in 2 tablespoons of olive oil and cook the chopped onion and garlic until it becomes translucent. Then, add 2 cups of frozen mixed vegetables until they become tender.
As the vegetables are cooking, cut 2 pounds of chicken breast in cubes. Add the chicken to the pot and mix well with the vegetables. Make sure the chicken is well cooked.
When the chicken is well cooked, add 3 1/3 cups of diced tomatoes. Stir well.
Pour the chicken stock and water and let it boil. Once the liquid is boiling, give it a good stir (not a crazy stir). Add the elbow macaroni and let it boil until it becomes al dente.
Lower the heat and gently give the soup a stir. Let the soup simmer for 10-15 minutes.
