Ingredients

  • 7 – 8 small potatoes (2lbs), peeled and sliced 1/4 in thickness
  • 1 small onion chopped finely
  • 1 cup chicken broth
  • 3 tbs heavy cream
  • 1/2 tsp salt
  • 8 oz shredded sharp white cheddar
  • 1/4 tsp pepper
  • 1 tsp onion powder

Preparation

Step 1

Place sliced potatoes into the pressure cooker with broth and onion and cook on high for 1 minute.
Instant release the pressure.
Set oven to broil.
Transfer the potatoes to an oven-safe dish leaving any cooking liquids in the pressure cooker.
Add the remaining ingredients to the pressure cooker, set to low heat and stir until smooth.
Pour the cheese sauce over the potatoes in the dish and toss to evenly distribute.
Top with reserved cheese.
Broil in the oven for 5 minutes or until the top of the potatoes are browned.
