Ingredients

  • Cookie:
  • 2 Cups butter, softened
  • 1 pkg (8 oz) cream cheese, softened
  • 2 cups sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 4-1/2 cups all purpose flour
  • Frosting:
  • 3-1/2 cups confectioners' sugar (divided)
  • 3 tablespoons butter, softened
  • 1 tablespoon shortening (Crisco)
  • 1/2 teaspoon vanilla extract
  • 3 to 4 tablespoons milk (divided)

Preparation

Step 1




Cookies:

1. In large bowl cream the butter, cream cheese and sugar until light and fluffy.
2. Beat in the egg yolks and vanilla
3. Gradually add flour and mix well.
4. Cover and chill 2 hours or until firm.

When ready:

1. Roll out on a floured surface to 1/4 inch thickness.
2. Cut into shapes and place one inch apart on greased baking sheets.
3. Bake at 350 degrees for about 12 minutes or until set (just slightly browned on edges)
4. Cool 5 minutes then remove to wire racks to finish cooking.

Frosting:

1. Combine 1-1/2 cups confectioners' sugar, butter, shortening, vanilla and 3 tablespoons of milk in a large bowl. Beat till smooth.
2. Gradually add remaining sugar. Beat till light and fluffy (about 3 minutes).
3. Add enough remaining milk and food coloring (if desired) until frosting reaches correct consistency.

Yields approximately 7 dozen - 3 inch cookies.
