Baked Pork Flautas

A healthy baked version of pork flautas with cheese in flour tortillas. Serve with Sriracha greek yogurt dipping sauce, guacamole, sour cream or salsa and dig in.

Ingredients
- FLAUTAS:
- Leftover pulled pork (or freshly made from your favorite recipe)
- Flour tortillas
- Cheddar cheese. shredded
- Cooking spray
- Olive oil, optional
- DIPPING SAUCE:
- 1 cup plain Greek yogurt
- 2 tablespoons Sriracha chili sauce
- 1 tablespoon lime juice

Preparation
Step 1
Preheat the oven to 375°F.
Fill each tortilla with 1/3 to 1/2 cup leftover pulled pork and 2 tablespoons shredded cheese.
Roll tightly and place seam side down on an oiled baking sheet.
Brush the flautas with olive oil or spray with cooking spray.
Bake for 10 minutes, then turn them over and bake for another 10 minutes, or until crispy/golden brown.
While the flautas are baking, mix together the Greek yogurt with the Sriracha chili sauce and lime juice.
Serve flautas with Sriracha greek yogurt dipping sauce, guacamole, sour cream or salsa!
Feel free to try substituting the pork with shredded chicken or beef.
