Ingredients

  • NOODLES:
  • 1 large onion - finely sliced
  • 2 Tbsp butter
  • 12 oz. potatoes - peeled & diced
  • 3 3/4 (1 qt) beef stock
  • 1 bay leaf
  • Salt & pepper
  • 1 c. Self Rising Flour
  • Pinch of salt
  • 1 Tbsp butter
  • 1 Tbsp chopped fresh parsley
  • 1 egg - beaten

Step 1

In wide heavy pan, cook onion in butter gently for 10 minutes - do not burn.

Add diced potatoes & cook 2-3 minutes, then add Beef stock. Add bay leaf, salt & pepper. Bring to a boil, then reduce heat, cover and simmer for 10 mins.

Meanwhile make noodles. Sift flour and salt into a bowl and rub in butter. Stir in parsley, add egg and mix to a soft dough.

Drop half-teaspoonfuls of dough into simmering soup. Cover and simmer gently for another 10 mins. Ladle soup into warmed soup bowls.
