Ingredients
- 1 1/2 cup fresh blueberries
- 1/2 cup chopped cucumber
- 1/2 cup fresh pineapple, diced
- 1/2 cup very thinly sliced fennel (1 small bulb)
- 2 cups cooked orzo pasta, cooled
- 1 1/2 tsp rice vinegar
- 1 tsp toasted sesame seeds
- 1 tsp toasted sesame oil
- salt and pepper to taste

Preparation
Step 1
Combine all ingredients in a large bowl.
Serve cold or at room temperature.
Optional: You can add 1 cup diced cooked chicken.
Serve with fresh salad greens.
