Blackened Chicken with Avocado Pasta and Sweet Corn

Ingredients
- Blackened Seasoning:
- 1 tsp paprika
- 1/2 tsp smoked paprika
- 1 Tbsp garlic powder
- 1 Tbsp onion powder
- 2 tsp ground thyme
- 1 tsp black pepper
- 1 tsp cayenne pepper
- 1 tsp dried basil
- 1 tsp dried oregano
- For Pasta:
- 8 oz dry thin whole grain spaghetti
- 4 chicken breasts, pounded thin
- 3 Tbsp + 1 tsp olive oil, divided
- 2 medium ripe avocados
- 2 Tbsp chopped garlic
- Juice from 1/2 lemon
- Salt and Pepper to taste
- 1 cup sweet corn kernels, cooked
- Parsley, for garnish

Preparation
Step 1
Mix together spices for blackened seasoning. Prepare pasta according to box directions, drain and set aside.
Coat chicken generously with approximately 4 Tbsp of blackened seasoning (reserve remaining for future use). Saute chicken in 1 teaspoon of olive oil approximately 6-8 minutes, flipping occasionally to ensure it doesn't burn.
While chicken is cooking, mash avocado, 3 Tbsp olive oil, garlic, and lemon juice. Season to taste with salt and pepper. Toss spaghetti with avocado sauce; stir in corn.
Remove chicken from pan, slice and serve atop pasta.
