Ingredients
- 1 can coconut cream
- 2 cups half and half
- 3 eggs
- 1/2 cup corn starch
- 1/4 tsp salt
- 1 cup flaked coconut, toasted
- 1 tsp vanilla
- 1 (9") pie shell, baked
- 1 cup frozen whipped topping, thawed

Preparation
Step 1
1. In a medium saucepan, combine the can cream of coconut and enough half and half to equal 3 cups. Add egg yolks, sugar, corn starch and salt. Bring to a boil over low heat, stirring constantly. Remove from heat and stir in 3/4 cup of the coconut and the vanilla. Pour into pie shell and chill for 2-4 hours, or until firm.
2. Top with whipped topping and with remaining 1/4 cup of coconut.
Note: To toast coconut, spread it in an ungreased pan and bake in a 350F oven for 5-7 mins, or until golden brown, stirring occasionally.
