Ingredients
- Peppery Rub:
- 1 tsp lemon pepper
- 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp ground chipotle pepper
- 4 beef top loin (strip) steaks, 1 1/4" thick
- Creamy Garlic Spinach:
- 1 16 oz package fresh baby spinach
- 1 1/2 oz package spreadable garlic and herb cheese, at room temp
- 1 tbsp cream or milk

Step 1
Combine the rub ingredients; press evenly onto steaks. Place steaks on grill over medium, ash-covered coals. Grill, uncovered, about 15-18 minutes for medium rare to medium doneness, turning occasionally.
Meanwhile, prepare the spinach. Bring a large pot of water to a boil. Add spinach, remove from heat. Stir just until spinach is wilted. Drain well, pressing out excess liquid. Wipe the pot dry, return spinach to the pot. Add cheese and cream, stir until cheese melts and coats spinach evenly.
Serve the steaks with the spinach.
