Melting Potatoes

- 2 lbs Yukon Gold potatoes
- 4 TBS (1/2 stick) melted butter
- 2 tsp fresh thyme or chopped rosemary leaves
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup chicken or vegetable stock
- 4 garlic cloves, smashed

Step 1
1. Preheat the oven to 500F with the rack in the upper-middle position.
2. Peel potatoes and slice them into 1-inch thick rounds. Toss rounds with butter, herbs, salt, and pepper. Transfer to a 13-X-9 inch metal baking dish and arrange in a single layer. NOTE: Don't use a glass dish, as it may burst under high heat.
3. Bake potatoes for 15 minutes. Flip potatoes, then bake for 15 more minutes. Remove dish from oven and add stock and garlic cloves. Return to the oven until most of the stock is absorbed - about 15 minutes longer.
4. Transfer potatoes to a serving platter and pour remaining liquid from the pan over the top. Serve warm.
