Ingredients
- 2 tbsp. butter
- 1 large onion sliced thinly
- 3 cloves garlic
- 1/2 tsp paprika
- 1/4 tsp salt and pepper
- 1 cup couscous
- Package of shrimp
- 1 cup grape tomatoes
- 1 cup vegetable broth
- 4 cups spinach

Preparation
Step 1
1. Melt butter over medium heat. Cook onion, garlic, paprika, salt and pepper, stirring until softened
2. Add couscous, toast for 2 mins. Stir in shrimp, tomatoes, broth, bring to boil. Cover and turn off heat, until no liquid remains. Stir in spinach
