Ingredients

  • Appropriate for Phase Two of The Fast Metabolism Diet
  • Makes 4 to 5 servings
  • 1 to 1 1/2 pounds organic beef round steak
  • 1/4 cup tamari
  • Juice of 1 lime or lemon
  • 1/2 tsp. onion salt
  • 1/4 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1/8 tsp. sea salt
  • 1/8 tsp. crushed red pepper flakes
  • Trim and discard all fat from the meat. Cut into strips approximately 5 inches long and 1/2 inch wide.

Real jerky also happens to be the ideal high-protein, low-fat snack. Unfortunately, most store-bought jerky comes pumped full of nitrites and other metabolism-strangling preservatives. Skip all that junk: make a big batch of your own all-natural homemade beef jerky, freeze individual portions in freezer bags, grab and go.

Makes 4 to 5 servings

In a large, resealable plastic bag, combine the remaining ingredients. Add the meat to the bag, seal bag, and toss to coat. Refrigerate and let marinate for 8 hours or overnight.
Bake uncovered at 200 degrees for 6 to 7 hours, or until meat is dry and leathery. Remove from oven; cool completely. Refrigerate or freeze in an airtight container.
