Ingredients

  • 1 mango, peeled and 1/2" diced
  • 1/4 cup pineapple, diced
  • 1/4 cup papaya, diced
  • 1/4 cup red bell pepper, diced
  • 1 tbsp finely diced fresh jalapenos
  • 1 tbsp chopped fresh cilantro
  • 1 small garlic clove, minced
  • 1 tbsp freshly squeezed lime juice
  • 1/4 tsp salt
  • 1/2 tsp extra virgin olive oil

Step 1

Mix all ingredients together and chill in refrigerator for 1 hour for flavors to meld. Serve with your choice of fish (recommend swordfish, mahi mahi or salmon).
