Ingredients

  • 4 green onions, chopped
  • 1 tablespoon plus 1/2 cup butter, divided
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 10 , eggs, beaten
  • 4 cups monterey jack cheese, shredded
  • 2 cups small curd cottage (16 ounce)

Preparation

Step 1

In a small pan saute onions in butter.
in a large bowl, combine flour, baking powder and salt. In another bowl, combine eggs and cheeses. Stir in dry ingredients.

Fill greased muffin cups 3/4 full. Bake at 350 for 35-40 minutes.
