Quaker Oatmeal - Chewy Fruit & Oatmeal Bars
My family loves these bars. I use more fruit than the recipe calls for, but that's a matter of personal preference. Will post a photo when I make these again.

Ingredients
- 3/4 Cup firmly packed brown sugar
- 1/2 Cup granulated sugar
- 1 8-ounce vanilla or plain low-fat yogurt
- 2 Egg whites, lightly beaten (I prefer to use the whole egg)
- 2 Tablespoons vegetable oil
- 2 Tablespoons skim, or low-fat, milk
- 2 Teaspoons vanilla extract
- 1-1/2 Cups all-purpose flour
- 1 Teaspoon baking soda
- 1 Teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 Cups Quaker Oats (quick or old fashioned - uncooked)
- 1 Cup diced dried mixed fruit, raisins or dried cranberries
- (Note: I personally use: dried blueberries, dates, apples, pineapple, apricots, peaches, raisins)

Preparation
Step 1
1. Heat oven to 350 degrees Fahreinheit
2. In large bowl combine sugars, yogurt, eggs, oil, milk and vanilla. Mix well.
3. In medium bowl combine flour, baking soda, cinnamon and salt.
4. Add dry ingredients to large bowl with wet ingredients. Mix very well.
5. Spread dough onto bottom of uncreased 13x9-inch baking pan.
6. Bake 28-32 minutes or until light golden brown.
7. Cool completely on wire rack.
Cover bars tightly to retain moisture. (I slice off a bar as I'm ready to eat it.)
