- 1 cup buckwheat flour
- 2 tsp baking powder
- 1/2 tsp stevia
- 1 tsp cinnamon
- 1 egg white, beaten
- 1 cup unsweetened rice milk
- 1 tsp vanilla extract

Mix dry ingredients. Add egg white, milk and vanilla. Mix well. Using 1/4 cup batter for each pancake, cook on a nonstick griddle or pan until bubbles begin to break on the surface. Flip and finish cooking. Meanwhile, heat 1 cup blackberries in a small saucepan with 2 Tbls water and a pinch of stevia. Pour sauce over pancakes and serve!
