Ingredients
- Boneless chicken breasts
- Pepper
- Sage
- Thin sliced prosciutto
- Flour
- Olive Oil
- Butter
- Marsala
- Arugula

Preparation
Step 1
Place chicken breasts between pieces of plastic wrap and pound to 1/4 inch thickness.
Season with pepper and sage
Wrap a piece of prosciutto around each breast.
Lightly dust the chicken on both sides with flour.
Heat butter and oil in a large skillet over med heat
Cook the chicken until no longer pink in the middle
Add Marsala to the pan to cover the bottom and heat until thickened
Add arugula and stir
