Ingredients

  • 1 pkg yellow butter cake mix
  • 2 cups cooked yellow squash (uses approximately 2 large yellow squash -steamed, drained, and pureed in the blender)
  • 2 eggs
  • 1 1/2 tsp baking soda
  • 1 t cinnamon
  • 1/2 t nutmeg

Preparation

Step 1

Combine all ingredients, beating until smooth.
Spoon batter into cupcake pan lined with cupcake papers.
Bake until toothpick comes out clean in a 350' oven 18-22 minutes.
Cool completely. Frost with either cream cheese frosting or vanilla buttercream frosting

Vanilla buttercream frosting
1 cup butter at room temp
4 cups powdered sugar
1/4 c milk
1 1/2 tsp vanilla extract

1 cup butter at room temp
4 cups powdered sugar
1 8 oz pkg softened cream cheese
