Ingredients
- 2 1/2 lbs chicken breast cut up in small pieces
- 1/4 cup flour
- 1 tsp salt
- 2 TBLSPs margarine
- 2 TBLSPs oil
- 1 small onion, sliced thin
- 1 clove garlic, minced
- 2 large carrots, chopped coarse (1 cup)
- 1 large rib celery, sliced thin (1/2 cup)
- 1 can (16oz) tomatoes, chopped fine
- 1/2 cup chicken broth
- 1 tsp basil
- 1 tsp rosemary

Step 1
1) Dredge chicken in mixture of flour and salt.
2) In large skillet over med-hi heat brown chicken in margarine and oil about 10 minutes;
3) Remove and set aside.
4) Add onion, garlic, carrots and celery to skillet; saute until onion is tender.
5) Add remaining ingredients and reserved chicken. Bring to boil; reduce heat; cover and simmer 30 minutes or until chicken is tender.
OR
1) In microwave oven in shallow baking dish cook margarine, oil, onion, garlic, carrots and celery on high, stirring once, (6 minutes)
2) Arrange chicken pieces in single layer on top, meaty portions toward outer edge. Combine tomatoes, broth, flour, salt, basil and rosemary;
3) Pour over chicken. Cover loosely with waxed paper.
4) Cook on high 20 to 25 minutes or until chicken is fork-tender, turning chicken and stirring sauce after 10 minutes.
5) Let stand covered 5 minutes.
